Curry is a generic name for any vegetables, lentil or meats prepared with spices and condiments. It is specially blended for taste and flavor. Contrary to common belief,curry is not a single spice, but a blend of spices that are unique to each region of the country and even vary from household to household. We present our version with fresh onions, tomatoes, ginger & garlic. Served with seasoned long-grain Indian rice.
Indian Villagers still cook with the traditional clay ovens, called tandoors, which are fed with charcoal or firewood. This infuses the food with a special smoked flavor. The meats & breads are cooked at a high temperature in the dome-shaped tandoor, often reaching 600 degrees Fahrenheit. This locks in all flavor & juices, baking food to perfection. Served with naan bread, tandoori foods are a gourmet delight for the health conscious. The tandoor was introduced to India from the Arab & Persian world prior to the 13th century and eventually became so popular with the reigning Moghuls that the Emperor Akbar, a connoisseur of good food & good living, considered it essential to take along on hunting expeditions.
